Lamb Gyros

Fancy weeknight dinners made simple with lamb meatballs easily assembled in gluten free pitas and loaded with veggies and zesty tzatziki sauce! Whip these up in a pinch and enjoy!



Ingredients:


  • BFree pita bread (I can usually find this brand at Publix or Wegmans)

  • 1 cup of cucumber 

  • 1/4 cup chopped purple onion 

  • 1 cup of arugula 


Lamb meatballs:


  • 1 lb of lamb 

  • 1/3 cup of diced mint 

  • 1/2 tsp of garlic powder 

  • 1/4 tsp of salt and pepper 

  • 2 tbsp of avocado oil 


Tzatziki sauce: 


  • 1/2 cup of Greek yogurt 

  • 1 tbsp of lemon juice 

  • 1 tbsp of olive oil 

  • 2 tbsp of fresh dill 

  • 1/4 tsp of salt and pepper 



Directions: In a medium size bowl, assemble and mix together your lamb, mint, garlic, salt, pepper and avocado oil. Next, roll them into 1.5 inch balls and then add them to a large skillet. Fry your lamb meatballs in avocado oil on medium to high heat. Simultaneously, in a small bowl, whip up your Tzatziki. Next, assemble your gyros by first adding a layer of arugula then onions, and then cucumber, Lastly, add in your meatballs and then finish them off with a drizzle of Tzatziki and enjoy!
