Christmas Quiche



Many of us find our homes full of loved ones come Christmas morning with lots of mouths to feed! This year, I have created the most delicious breakfast quiche that is sure to be crowd pleaser and to relieve some stress when in a pinch for time! Pair it with some fresh fruit and hot coffee and in no time, breakfast will be served!


Ingredients:


  • 2 Wholly Gluten Free pie crust (I find mine at Publix or Wegmans and love this short cut around the holidays!)

  • 6 eggs

  • 4 oz of feta cheese

  • 1 cup of chopped zucchini

  • 1 cup of chopped baby Bella mushrooms

  • 1/2 tsp of salt, pepper and thyme

  • 1/2 tbsp of garlic powder


Directions:


Preheat your oven to 350 degrees then get to chopping up your zucchini and mushrooms. Then, in a medium bowl and in no particular order, mix together your ingredients and then pour it evenly amongst your two pie crusts. Bake your quiche at 350 degrees for 45 minutes and then enjoy!
