Chilly winter days are the perfect time to throw together a delicious and comforting soup to warm you from the inside out! Introducing my chicken noodle soup loaded with delicious protein, nutritious veggies and zesty herbs that is sure to both fill and energize you!
Ingredients:
16 oz of GF fusilli (Jovial is my go to brand)
1 1b. of cooked and shredded chicken
4 cups of chicken stock
4 cups of water
1/2 cup of diced carrots
1/2 cup of chopped scallions
1 cup of sliced baby Bella mushrooms
4 peeled and chopped garlic cloves
2 tbsp avocado oil
2 tbsp of lemon juice (about the juice on lemon)
1 tsp of salt
1/2 tsp of pepper
1/4 tsp of paprika
Directions:
First, boil and shred your chicken. Then toss it in with your broth, water, lemon and seasonings. Simultaneously, cook your pasta and set it aside. Allow the veggies, chicken and spices to come to a boil. Lastly, add in your cooked pasta and then allow the soup to simmer for 30 minutes on medium/ low heat. Enjoy and stay warm my friends!
